How do people come up with these great ideas? Combining two delectable bakery items into one delicious treat was a stroke of genius. I don’t know who came up with the original recipe, but I am most appreciative.
Tons of calories and high in fat, they are designed for sharing with other chocolate lovers. Make sure you allow enough time for chilling the cookie dough; this step is essential for producing a moist cupcake.
1 ½ cups all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
¼ cup white sugar
½ cup brown sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
Cream together butter, sugars, egg, and vanilla. Mix until smooth.
Stir in dry ingredients. Mix in chocolate chips.
Form dough into 24 balls. Place in a pan and freeze about two hours or until frozen solid.
You can use your favorite chocolate cake recipe. This is the one I use:
1 & 2/3 cups all purpose flour
1½ cups sugar
2/3 cups cocoa
1½ tsp baking soda
1 tsp salt
1½ cups of buttermilk*
½ cup shortening
1 tsp vanilla extract
In a large mixing bowl combine all the dry ingredients. Mix in buttermilk, eggs,
shortening, and vanilla. Beat for two minutes at medium speed.
Preheat oven to 350º. Line 24 muffin cups with paper liners. Fill cups about 2/3’s full. Put a frozen cookie ball in the center of the batter.
Bake about 20 minutes. Test for doneness on the edges of the cupcake as the center should be gooey. Cool.
You can use your favorite chocolate frosting. I use a chocolate ganache as it is quick and easy and pretty tasty too!
1 cup heavy cream
1 cup semi-sweet chocolate chips
Put chocolate chips in large mixing bowl.
Heat cream until it just reaches the boiling point.
Pour over chocolate chips. Let sit for just a minute and then stir until chips are melted.
When cool, whip on high speed. The color will change from a dark brown to a light brown.
