Banana Chocolate Chip Muffins

Being a mother who treasures quiet in the morning, I was committed to having my home schooled children sleep in as late as I could decently allow. And while I loved having them awaken to the aroma of baked goods, I didn’t like taking the chance they would wake up too early from the noise of my mixer.

This is a recipe I tweaked so they could have piping hot muffins for breakfast, and at the same time slumber on in blissful quiet.

Hands-down favorite muffins in our family.

12 muffins ÷ 4 kids = 3 muffins each.

Never a crumb left over.


Ingredients and Directions:

½ cup melted butter
½ cup sugar
1 egg
2 mashed bananas
1 t. vanilla
1 t. baking soda dissolved in 1 T. boiling water
1½ cups flour
1 t. baking powder
¼ t. salt
½ cup chocolate chips (or more if you are a lover of chocolate)

Preheat oven to 350º.
Stir sugar into melted butter. Add egg, bananas, vanilla, and baking soda/water mixture.
Stir in flour, baking powder and salt just until mixed.
Gently add in chocolate chips.

Spoon batter into 12 greased muffin cups. Bake for 17-18 minutes or until they are golden brown. These are best served with a glass of cold milk.  Enjoy!

    • Secret recipe. I like that. 🙂 If you make them, how do you divide 12 by 5? Or maybe your roomies won’t be as fanatical about an equal share of these muffins.

  1. Thanks for sharing the “secret family recipe”. This was great for a second snow day. Twelve divided by two equals six….yessss! But we discovered that 3 yummy muffins is sufficient.
